Bacon Wrapped Spinach and Mushroom Stuffed Chicken


Here’s what you’ll need:

Boneless skinless chicken thighs
Chopped frozen spinach
Chopped mushrooms
Cream cheese
Ranch dressing powder
Thick cut bacon

Here’s how we prepare:
Preheat oven at 380 degrees
Use a mallet to pound out thighs
In a bowl, combine thawed spinach, mushrooms, ranch and cream cheese
Put a spoon full of filling on chicken thigh and roll
Wrap bacon strip around the chicken roll

Bake for about 40 minutes until thoroughly cooked through.

I prepared some garlic mashed potatoes and some garlic sauteed mushrooms.
