In our house we eat chili once a week. Not only does everyone love it but it’s a really quick dish to prepare- and let’s not forget the best part… it’s cheap! My 10 year old loves to eat the left over chili for breakfast with scrambled eggs, so I decided to put together a casserole for everyone on Sunday morning. This is so good- you really need to try it out. I just warmed up the chili from the night before and scrambled some eggs and assembled it. We had some hot dog buns- but I want to try it again with some Hawaiian sweet bread next time. Everything was warm so I just popped it under the broiler for a couple of minutes to melt the cheese.
