I love bacon and I love pancakes. Together they make the perfect sweet/salty treat. I woke up early this morning to whip up some of these for breakfast and ended up making a ton. I packed some to-go for me and Kahele- Kuha’o ate his at home and told me “mom that was the best, I’m totally ready for school. You should make that every morning”. My heart melted. It’s so true that when you cook for your family they can taste the love that you put into it.
This is really too easy to make. Instructions not necessary but hey we’ll include them anyway.
Maple bacon & Pancake mix (you can do yours from scratch, I’m just a “cut corners” kind of girl). Butter and Maple syrup too… duh!
Chop bacon and cook until crispy. Set aside to drain all the oil.
In a large bowl mix water with pancake mix.
For standard-size pancakes, I pour a ladle of batter onto a hot, lightly greased pan. After batter is spread, cover with chopped bacon, then flip. Cook over medium heat for about a minute or 2 on each side. If you want to have a nice presentation, you can garnish with some chopped bacon. That’s it!
