Hi all! Hope everyone is doing well. It was another cozy day today. I’m sitting outside because it’s a chilly 73 degrees tonight. Yes, here in Hawaii we consider that chilly. I did some baking today. I’ve been spending a lot of time on Pinterest looking for recipes. I’ve been cooking all of our food for the last couple of weeks so I need to keep it interesting for my family.
For breakfast, I made this crescent crusted omelette. I used the canned rolls, added some eggs cheese and bacon and baked it. It was all right. The kids loved it but me, not so much.
I had some cans of coconut milk so I made some haupia rice pudding. This was awesome. I got the recipe from my grandma. Here’s the recipe:
**3/4 cup rice (I used calrose) ** 3 cups (2cans) coconut milk ** 1/2 cup sugar ** 1 tsp vanilla extract.
Combine milk, sugar and vanilla in a medium saucepan. Bring to a boil, stirring occasionally.
Gradually stir in rice, cover pan and cook over low heat, stirring occasionally for 30 minutes or until most of the liquid is absorbed. Remove from heat and cool.
My kids and I like to eat it warm but I love to chill some and top it with various toppings. Here are some things I had in tins as garnishes.
Here is a picture of our beautiful sunset. As I’m sitting out here I notice that it even seems quieter than usual. I’m wondering if it’s the lack of cars on the road? It’s so peaceful.
